25 Days of Christmas Cookies


These are a fresh & sweet change from all the peanut butter and chocolate during the holiday season. Not usually a favorite among the kiddos in the house but very refreshing!
Day 5
Cashew-Lemon Shortbread Cookies
Ingredients
1/2 cup roasted cashews
1 cup butter, softened
1/2 cup sugar plus additional
2 tsp lemon extract
1 tsp vanilla
2 cups all purpose flour
Directions
Preheat oven to 325⁰F. Place cashews in food processor; process until finely ground. Add butter, 1/2 cup sugar, lemon extract and vanilla; process until well blended. Add flour; process using on/off pulsing action until dough is well blended and begins to form a ball. Shape dough into 1-1/2-inch balls; roll in additional sugar. Place about 2 inches apart on ungreased baking sheets; flatten. Bake 17-19 minutes or just until set and edges are lightly browned. Remove cookies fom baking sheets to wire rack to cool. Makes about 2 dozen cookies.
