Brown Sugar Pork Chops

The weather here is way too cold to grill so I made these in a cast iron pan on medium heat. I made the sauce earlier today, one less thing to do and clean up at dinner time. The meat was tender and moist, everyone loved the flavor.
Ingredients
1/4 cup firmly packed light brown sugar
1/4 cup apple juice
2 tbsp vegetable oil
1 tbsp soy sauce
1/2 tsp ground ginger
1/4 tsp black pepper
1/8 tsp salt
1/4 cup cold water
1 tsp cornstarch
6 boneless loin pork chops (about 1/2-inch thick)
Directions
Preheat grill to medium. Place rack 6-inches from heat. For sauce, combine brown sugar, apple juice, vegetable oil, soy sauce, ginger, black pepper and salt in a small saucepan. Cook over medium heat, stirring continually, until brown sugar is dissolved and mixture is smooth. Combine cold water and cornstarch in a small bowl and mix well. Add to the brown sugar mixture and mix well cook mixture, stirring continually, until thickened, about 3 to 4 minutes. Grill pork chops, turning once, for 10 minutes. Brush with sauce. Grill, turning and brushing with sauce, until juices run clear when meat is pierced with a knife, about 5 minutes.
