This busy day calls for a simple meal. I had actually work to do today, I knew I was going to have to help Christopher at some point, Haillie and I have to be at the high school by 4:00 pm to work the concession stand and then at 7:00 pm I have a Band Booster meeting. I'm really hoping to be home no later than 9:00 pm. I baked a loaf of bread this morning and in 30 minutes I threw this chowder together. The original recipe is below but I have a finicky eater and have made some revision. I don't add the chopped onion and celery, she would freak! Instead I use some onion powder and dried celery leaves. I also add at least twice the amount of cheese as my family loves it cheesy.
Ingredients
1 small whole chicken breast
1/4 cup chopped onion
1/4 cup chopped celery
1 (10-3/4 oz) can condensed cream of chicken soup
1 (8-3/4 oz) can whole kernel corn
1/2 cup milk
1/2 cup shredded American cheese
Directions
In a saucepan combine chicken, onion, celery and 1/2 cup water. Bring to a boil, reduce heat. cover; simmer 15 to 20 minutes. Remove chicken; when cool enough to handle, cut off meat and chop. Discard skins and bones. Return meat to broth; stir in remaining ingredients. Cook, uncovered for 10 minutes. Serves 4.
