Sour Cream Potato Soup

For tonight's dinner I added cubed up ham to the soup. It make the soup more filling. When I don't add ham I sprinkle it with crumbled bacon when serving. It really turns into more of a chowder than a soup. Add a side salad and a loaf of bread for dipping. Another quick & easy meal is served.
Ingredients
1 onion, chopped
1 tbsp butter
3 potatoes, cubed
4 cups water
1 tbsp parsley
1/2 cup all purpose flour
1 cup sour cream
2 eggs
1 hardboiled egg, chopped for garnish (optional)
Directions
Sauté onion in butter until tender; add potatoes, water and parsley. Heat until potatoes are tender; remove from heat. In a bowl, combine flour, sour cream and eggs; slowly stir into soup mixture. Heat through until eggs are set, stirring constantly. Garnish with chopped egg. Makes 6 servings.
