Whoopie Pies


Abby's birthday party is tomorrow after school and this year she requested a HUGE whoopie pie with Aunt Amy's Oreo Buttercream Frosting. To make it more special, it is her birthday after all, I had a variety of whoopie pies going around the HUGE whoopie pie. There is the original chocolate whoopie pie but with a peanut butter filling, a blue velvet whoopie with a white filling and a vanilla whoopie pie with a chocolate filling. I am so very sick of whoopie pies.


Whoopie Pies
This is the original recipe of a chocolate whoopie pie with a light and fluffy white filling. In my book this is the best one.
Ingredients
4 cups all-purpose flour
1 cup unsweetened cocoa powder
2 teaspoons baking soda
1/2 teaspoon salt
1 cup Crisco (original, not butter flavored)
2 cups sugar
2 eggs
1 cup hot water
1 cup sour milk (put 1 tablespoon lemon juice into a measuring cup and add enjoy milk to equal one cup, let stand for 5 minutes)
2 teaspoons vanilla
Filling
4 tablespoons all-purpose flour
2 egg whites
4 tablespoons milk
2 cups powdered sugar
1-1/2 cups Crisco (original, not butter flavored)
2 cups powdered sugar
2 teaspoons vanilla
Directions
Preheat oven to 375 ⁰F. Sift together flour, cocoa, baking soda and salt. Cream Crisco and sugar. When creamed well, add eggs, water, sour milk and vanilla. Add dry ingredients. Drop on cookie sheet. Bake for 8 to 10 minutes. Cool completely.
To make filling: Beat flour, egg whites, milk and powdered sugar. Beat well and add Crisco, powdered sugar and vanilla. Beat well. Spread between the flat sides of two cookies and sandwich together.

Cookies-n-Cream Buttercream Frosting
This is my SIL's recipe and is crazy good! You can use as little or as many Oreo cookies as you want. I used the whole package.
Ingredients
1/2 cup butter, softened
1 cup Crisco (original, not butter flavored)
1/2 cup milk
1 tablespoon vanilla
2 pounds powdered sugar
1 teaspoon meringue powder
Pinch of salt
Oreo cookies
Directions
Cream butter and Crisco until light and fluffy. Add milk and vanilla and mix until smooth. Gradually add powdered sugar, meringue powder and salt. Beat until fluffy, may need to add more milk until smooth. Stir in lots of crushed Oreo cookies.

Peanut Butter Filling
I just grabbed the first one in my recipe box.
Ingredients
1 tablespoon butter
1 3/4 cups powdered sugar
1/4 cup peanut butter
1/2 cup milk
Directions
Blend 1 tablespoon butter and peanut butter. Stir in powdered sugar and add enough milk to make frosting soft enough to spread. Spread between the flat sides of two cookies and sandwich together.

Blue Velvet Whoopie Pies with Cooked White Filling
Abby went crazy when she saw blue whoopie pies, I done well.
Ingredients
2  cups all-purpose flour
2  tablespoons unsweetened cocoa powder
1/2  teaspoon baking soda
1/4  teaspoon salt
1/2  cup butter, softened
1  cup packed brown sugar
1  egg
1  tsp. vanilla
1/2  cup sour milk
1  1-oz. bottle blue food coloring (2 Tbsp.)
Filling
3 tablespoons all-purpose flour
1/2 teaspoon salt
1 cup milk
1/2 cup butter
1 cup white sugar
1/2 cup shortening
2 teaspoons vanilla extract
2 teaspoons butter flavored extract
Directions
Preheat oven to 375 ⁰F. In medium bowl combine flour, cocoa powder, baking soda, and salt; set aside. In large mixing bowl beat butter on medium to high 30 seconds. Beat in brown sugar until light and fluffy. Beat in egg and vanilla. Alternately add flour mixture and sour milk, beating after each addition just until combined. Stir in food coloring. Drop spoonfuls of batter onto baking sheets. Bake 9 to 11 minutes, or until tops are set. Cool completely on baking sheets on rack. Remove cooled cookies from baking sheets.
To make filling: Cook 3 tablespoons of flour, 1/2 teaspoon of salt, and milk in a skillet over low heat, stirring constantly, until thick. Let cool completely. Cream butter, 1 cup sugar, and 1/2 cup shortening in a separate bowl. Stir in 2 teaspoons each of vanilla extract and butter flavored extract. Then add flour mixture to bowl and cream together. Spread between the flat sides of two cookies and sandwich together.

Vanilla Whoopie Pies with Chocolate Filling
This is the recipe I used but I don't think I'll be using it again as the whoopie pies seemed too soft.
Ingredients
1 cup shortening
2 cups granulated sugar
3/4 teaspoon salt
5 cups flour
2 whole eggs
2 egg yolks
1/2 cup hot water
1 teaspoon baking powder
2 teaspoons baking soda
1-1/2 cup sour milk
1 tablespoon vanilla
Filling
1/4 cup butter
2 cups powdered sugar
3 tablespoons unsweetened cocoa powder
1 teaspoon vanilla
2 tablespoons milk
Directions
Preheat oven to 375⁰. Cream shortening, sugar, salt, eggs and vanilla together. Sift flour and baking powder, add soda with water and milk. Mix together. Drop on cookie sheet. Bake for 8 to 10 minutes. Cool completely.
To make filling: Mix together butter, powdered sugar, cocoa powder, vanilla and milk. Mix until light and fluffy. May need to add more milk (slowly) until frosting reaches a spreadable consistency. Spread between the flat sides of two cookies and sandwich together.
