sautéed sweet potatoes…

Once again my husband has sabotaged our family meal. Due to a late commissioning ceremony he won't be coming home this evening. *grrr* I thought this would be the perfect opportunity to try sautéed sweet potatoes. I'm the only one here that will allow a sweet potato past my lips. I have only had them candy in brown sugar and butter. Not very healthy but absolutely delish! This recipe was just as yummy without any of the guilt.
Ingredients
2 tablespoons olive oil
2 large sweet potatoes, cubed
1/2 cup sweet onion, chopped
2 teaspoons minced garlic
1/2 cup chicken broth
Brown sugar
Salt and pepper, to taste
Directions
Heat oil in a large nonstick skillet over medium heat. Add sweet potatoes and cook, stirring often until they start to soften, 8 to 10 minutes. Add chicken broth, onion and minced garlic.
Cook, stirring, until broth evaporates and potatoes are tender and browned, about 10 minutes. Sprinkle some brown sugar and stir. Transfer to a bowl. Season with salt and pepper.

Yuuuummmmmmm. I SO love a sweet potato. I'm always looking for new ways to cook them. They are so stinkin' good for you too. I can't wait to try this! Did the girls like them?
