Banana Oatmeal Nut Cookies

Saturday was such a draining day. It was the first day of archery so Christopher was out the door and up a tree by 6:00a. Crazy! The girls and I worked on their Halloween costumes and made a shopping trip. Haillie will be "Enjolras" from Les Mis and Abby will be "Mystique Sonia" from Hero 108. Whose kids are these? What ever happened to dressing up like Hobos, Ghost and Princesses? When we returned home Christopher was already back. Poor guy caught the cold that Hails and I had last week and was coughing to much to hunt. He ended up falling asleep for a good five hours which left me alone time to work on a website. The whole time I could smell the bananas on the counter and kept thinking about cookies. These cookies are amazing! I ground black walnuts so the kiddos wouldn't see them. The oatmeal and banana combination was delish.

Ingredients
1-1/2 cups sifted all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon ground nutmeg
3/4 teaspoon ground cinnamon
3/4 cup shortening
1 cup white sugar
1 egg
1 cup mashed bananas
1-3/4 cups quick cooking oats
1/2 cup chopped nuts
Directions
Preheat oven to 400 ⁰F. Sift together the flour, baking soda, salt, nutmeg and cinnamon. Cream together the shortening and sugar; beat until light and fluffy. Add egg, banana, oatmeal and nuts. Mix well. Add dry ingredients, mix well and drop by the teaspoon on ungreased cookie sheet. Bake for 15 minutes or until edges turn lightly brown. Cool on wire rack. Store in a closed container.
