What a stressful morning. I have been working on Haillie's Les Mis costume and it is so close to being done. I was in need of a break and what better way to relax than to bake something.
Abby squealed when she walked into the kitchen after school today. I love when that happens. When it comes to baked goods she is a chocolate peanut butter kind of gal. During this time of the year I feel like she is being left out since I'm baking so many apple or pumpkin treats. Little Miss Finicky won't even give them a try. Oy. She is missing out on some scrumptious baked goods. I came across this recipe some time ago but never got around to giving it a try. I knew anything with Oreo cookies would make her day, especially with the cute irresistible baby Oreo cookies on top.

Ingredients
1 pkg oreos, regular size
1 pkg mini oreos, for decoration
1 pkg chocolate cake mix/ mix according to directions on box
8 oz cream cheese, room temperature
8 tbsp butter, room temperature
3-3/4 cups powdered sugar
1 tsp vanilla extract
cupcake liners
Directions
Preheat oven to 350 ⁰F. Mix packaged cake mix according to directions (do not bake). Line cupcake tins with liner, place an regular size oreo cookie in the bottom of each one. Take 1/2 of remaining cookies and chop coarsely and add to cake mix. Fill the cupcake tins. Bake for 15 min (or according to box directions). While cupcakes are baking make the frosting. Cream together butter and cream cheese. Add vanilla, then add powdered sugar slowly until blended well. Chop remaining regular-sized Oreos very fine. Add to frosting. After cupcakes are cool put frosting on and decorate with a few mini oreos on top.
