Springing forward is such a horrible mean thing to do to a person. Today was a long, tough day. I found it hard to focus and concentrate on my work. Time to make some comfort food. These meatballs over pasta were a perfect ending to a crazy day. My family enjoyed them and we are a picky meatball family. I however am on a strict diet and didn't get to enjoy them. Oh they smelled scrumptious.

Recipe from Gooseberry Patch Meals in Minutes 10th Anniversary Edition.
Ingredients
1 to 1-1/2 lbs ground beef
1/2 cup grated parmesan cheese
2 tbsp dried, minced onion
1 egg
1 cup milk, divided
2 to 4 tbsp butter
1/4 cup all purpose flour
10-1/2 oz can beef broth
1/2 cup dry white wine or beef broth
Directions
In a large bowl, mix beef, Parmesan cheese, bread crumbs, onion, egg and 1/2 cup milk; shape into 1-1/2" or 2" balls. Sauté in butter in a large, heavy skillet over medium heat; remove meatballs to a platter when browned. Decrease heat to low; whisk flour into drippings in skillet. Increase heat to medium and gradually whisk in remaining milk, broth and wine or broth; bring to a boil until mixture thickens, stirring often. Return meatballs to skillet; reduce heat, cover and simmer for 20 minutes. Serves 4 to 6.
