Smashed Sweet Potatoes

I'm the only person that will eat sweet potatoes and this recipe was so easy to make for one. I used one large sweet potato and adjusted the the other ingredients. It was delish. Since it was such a small amount I didn't reheat them in the oven but used the microwave. I'll be adding sweet potatoes to this week grocery list and having them for lunch. Yummers!

Ingredients
4 sweet potatoes
4-8 tsp minced garlic
2 tablespoons butter (at room temperature)
3/4 cup light sour cream
honey to sweeten
salt and pepper to taste
Directions
Prick the sweet potatoes with a fork or the tip of a paring knife. Microwave according to your microwave's instructions. Mine has a potato button that worked wonderfully. Allow to cool slightly. Peel the sweet potatoes, and place into a mixing bowl. Add garlic into the bowl, then add the butter, sour cream and honey. Mash until smooth, then season to taste with salt and pepper. Scrape the mashed potatoes into a 1-1/2 quart baking dish, and reheat in a 350 F oven for about 15 minutes or until heated the whole way through.
