Taffy Apple Cupcakes

I am so ready for a nap. Christopher had to get up this morning at 3:30a and I have been up since. My butt is dragging. I have Christmas music blasting and the house can't get much cleaner. I am bored out of my mind waiting for the Dish Network Crew to get here and hook us up. Perfect time to bake a yummy fall treat to keep myself awake. I already had all the ingredients on hand. Shield your eyes, the orange counter is blinding!
These cupcakes made the house smell delicious! I toasted the walnuts to add to the flavor. *omg* I am excited for Haillie to get home from school because she will absolutely love these.
Recipe from Gooseberry Patch Autumn with Family & Friends
Ingredients
1 pkg (18-1/4 oz) carrot cake mix
1 cup Granny Smith apples, cored, peeled and finely chopped
1/2 tsp cinnamon
20 caramels, unwrapped
1/4 cup milk
1 cup pecans or walnuts, finely chopped
12 wooden craft sticks
Directions
Preheat oven to 350 ⁰F. Prepare cake mix according to package instructions; stir in apples and cinnamon. Fill paper-lined jumbo muffin cups 2/3 full. Bake for 20 to 25 minutes, until a toothpick inserted near center tests clean. Combine caramels and milk in a small saucepan over low heat; stir until melted and smooth. Spread caramel over cooled cupcakes; sprinkle nuts over top. Insert a craft stick into center of each cupcake. Makes one dozen.

Those look so yummy & so cute! I wonder how they'd be w/ spice cake mix instead (have that on hand ;)).

Those look and sound delicious! I was wondering about a spice cake too.
We're trying to recover from over eating this weekend or I'd be making those tomorrow!

I think a spice cake would work just fine. I wish I still had back sales to donate to. These would be so cute.
