Sour Cream Cheese Puffs

These made the perfect appetizers. Delicious. Even non cream cheese lovers liked them.

Ingredients
1 package (8 oz) cream cheese, softened
1 cup (8 oz) sour cream
1/3 cup finely chopped sweet red pepper
1/4 cup finely chopped onion
2 tsp lemon juice
3/4 tsp dill weed
1/4 tsp pepper
2 tubes (12 oz each) refrigerated buttermilk biscuits
1/4 cup minced fresh cilantro
Directions
In a small bowl, beat the cream cheese, sour cream, red pepper, onion, lemon juice, dill and pepper until blended. Cut each biscuit in half horizontally; press into greased miniature muffin cups. Place a rounded tablespoonful of cream cheese mixture in each cup. Bake at 375 °F for 14-16 minutes or until golden brown. Sprinkle with cilantro. Serve warm.

Bacon & Cheddar Dip

Holiday fopa #1 totally forgot the bacon for the dip. Duh! The recipe called for bacon bits and I thought it would be better with real bacon cooked and crumbled. And I'm sure it would have been but in the hustle and bustle it slipped my mind. The dip was still delish but who can resist ranch and sharp cheddar cheese. It went perfect with the homemade cheddar crisp crackers.

Ingredients
1 container (16 oz) sour cream
1 package (1 oz) ranch salad dressing mix
1/2 cup shredded Cheddar cheese
1/4 cup bacon bits
Directions
Mix together sour cream and dressing mix; add cheese and bacon bits. Stir well; chill for one hour before serving.

Pizza Rolls

I was looking for something simple and filling.
Plus I knew I would be baking all day and really who wants to cook on their birthday? These were quick, easy and everyone loved them. Including Abby. We will be having these again over Christmas break during family game night.

Ingredients
2 cans refrigerated pizza crust
garlic salt
Italian Seasoning
1 cup sliced and chopped pepperoni
1 cup shredded pizza cheese
1/2 cup Parmesan Cheese
pizza sauce for dipping
Directions
Preheat oven to 425 °F. Dust a large cutting board or piece of wax paper with flour and roll out each pizza crust. Season each crust with garlic salt and Italian seasoning. Top with cheese and meat. Starting with a short end, roll crust into a tight log. Slice into 1″ sections. Place on lightly greased pan and bake for 10-12 mins. Serve with pizza sauce for dipping.
