Honey-Barbecued Pork

OMG!
This recipe is Abby approved. I am stunned. I think it would have been an even bigger hit if I served it on mini buns. Who can resist sliders? Can’t get you finicky eater to eat. Just make their food cute and tiny and they’ll gobble it up.

Recipe from Gooseberry Patch 101 Soups, Salads & Sandwiches.
Ingredients
2-3 lb pork roast
2 onions, chopped
1 (12 oz) bottle barbecue sauce
1/4 cup honey
6-8 sandwich rolls, split
Directions
Place pork in a slow cooker. Add onions, barbecue sauce and honey. Cover and cook on low setting for 6 to 8 hours. Use 2 forks to shred roast; mix well. Serve on rolls. Makes 6 to 8 servings.

Pork Apple Burgers

Oh the excitement is high in the kitchen tonight. We were suppose to be have macaroni & cheese with our burgers but then I found the "Tater Twister". Ta-Da. It's a blast from my childhood past. I forgot we even had it. The kiddos never saw it before so it was like a new toy to them. Abby had fun making the curly fries.
Even though the curly fries were a huge hit the burgers were not. My family doesn't seem to like the idea of fruit mixed in with their meat. Dang Finickies. I thought they were a nice change even though I opted out of the pineapple slices. I knew I couldn't sneak that part past them.

Ingredients
2 lbs ground pork
1 Granny Smith apple, peeled, cored and chopped
1 sweet onion, finely chopped
3 cloves garlic, minced
1/4 cup teriyaki sauce
1 egg
8 hamburger buns
1 (20 oz) can sliced pineapple, drained
Directions
Preheat grill for medium-high heat.
In a large bowl, mix together ground pork, apple, onion, garlic, teriyaki sauce, and egg. If too dry, add some juice from the can of pineapple slices. Form into eight patties.
Lightly oil grill grate. Grill pork burgers for 10 minutes, or until well done. Toast buns on grill. Serve burgers on toasted buns topped with pineapple slices.

Slow Cooker San Francisco Chops

Oh dear sweet Monday why are you such a challenge?
Monday mornings are always a rush around here, you would think I didn't know it was coming. There are certain things I tend to procrastinate on. Such as the grocery list or our weekly schedule to make sure I can be everywhere that everyone needs me to be. Add in the fact that it's a week before a major cooking holiday and I leave the house without finishing my first cup of coffee. Yikes! Thank goodness for slow cookers. I grabbed this recipe from my friend Paula @ "Queen of my Castle". I figured if her finicky eater loved it then so would mine.
In the midst of my crazy day my wonderful husband surprised me with an early birthday gift. He is so awful when it comes to keeping presents under wraps. Not that I mind. It's been months since my ugly black wireless mouse died and I have been forced to use the old wired one. Well no more! I have a pink addiction and my man loves feeding it. He rocks my socks!
Dinner was a success! Well except for the rice. What was I thinking? I should have made noodles for Miss Finicky Pants. I think I could have licked the slow cooker clean, the sauce was that amazing.

Ingredients
4 pork chops (1-inch thick)
2 tbsp vegetable oil
1 clove garlic, minced
1/4 cup soy sauce
1/4 cup red wine or chicken broth
2 tbsp brown sugar
1/4 tsp red pepper flakes
1 tbsp cornstarch
1 tbsp cold water
Hot Cooked Rice, for serving
Green onions, sliced, for garnish (optional)
Directions
In a skillet, brown pork chops on both sides in oil; transfer to a slow cooker. Add garlic to drippings; cook and stir until aromatic or golden. Stir in soy sauce, wine, brown sugar and red pepper flakes; cook and stir until sugar is dissolved. Pour over chops.
Cover and cook on low for 7 to 8 hours or until meat is tender. Remove chops - they will probably be falling apart by this time! Combine cornstarch and water until smooth; gradually stir into slow cooker. Return chops to slow cooker. Cover and cook for at least 30 minutes or until slightly thickened. Serve over rice and garnish with green onions, if desired.

Honey Barbecued Spare Ribs

Installing insulation all day and trick-or-treating in the evening. How lucky can I be? *eye roll* This day was so full. For a quick meal I marinated some boneless pork ribs overnight in apple cider. I didn't have to do much else with them other than the occasional basting. They were mouth watering good.

Ingredients
3 lbs boneless pork spare ribs
apple cider, enough to soak ribs
2 tbsp lemon juice
2 tbsp honey
2 tbsp vegetable oil
1 tbsp soy sauce
1 tsp onion powder
1 tsp paprika
1 tsp salt
1/2 tsp dried oregano
2 tsp minced garlic
Directions
Soak ribs overnight in apple cider. Preheat oven 350 ⁰F. Cut spare ribs into serving-size pieces. Place ribs on a rack in a shallow roasting pan. Cover and roast for 1 hour. Drain. Combine all the remaining ingredients in a bowl; brush some of glaze on ribs. Roast, uncovered, 30-45 minutes longer or until meat is tender, brushing occasionally with remaining glaze.

Beef ‘n’ Pork Burgers

It's has been one of those days. It's a Guard weekend so Christopher is working. The girls and I ran into town for they needed some book covers for school. Our front porch was begging for fall decorations. And for some strange unexplainable reason the cleaning bug bit me today. By dinner time our home was spotless and the scent of apple cider candles filled the air. I guess fall isn't that bad of a season after all.
Now onto the burgers. They were so monstrous, moist and delicious. While sautéing the bacon, onion and garlic my bacon never did get crisp. I then let that mixture cool and put it through a food processor so my finicky eater wouldn't see pieces of onion. I used a food scale and make my burgers 6 oz. They were amazing and everyone enjoyed them more than my ranch and cheese burgers.

Ingredients
4 bacon strips, diced
1 large onion, finely chopped
1 garlic clove, minced
1-1/2 cups soft bread crumbs
1 egg, beaten
1/2 cup water
1 tbsp dried parsley flakes
1/4 tsp dried marjoram
1/4 tsp paprika
1/4 tsp pepper
1 lb ground beef
1 lb ground pork
8 hamburger buns, split and toasted
Directions
In a skillet, cook bacon, onion and garlic over medium heat until the bacon is crisp; drain and place in a bowl. Stir in bread crumbs, egg, water, parsley, salt, marjoram, paprika and pepper. Crumble beef and pork over the mixture and mix well. shape into eight 3/4-inch thick patties.
Grill, uncovered, over medium-hot heat for 9-12 minutes or until juices run clear, turning occasionally. Serve on bun.

Shredded BBQ Sliders w/Creamy Cole Slaw

This meal was perfect for this type of day. I had my sauce made, roast in the oven, cole slaw assembled and kitchen cleaned up by 9:00 AM. Awesomeness! Then I waited, and waited, and waited and waited some more for the dang cable guy. Around noon I broke down and called to check if they were planning on stopping by. I may not have much of a life but I still had responsibilities and errands to run that had to be done today. The women on the other end of the phone assured me they would be here sometime from now to this evening. *lol* Great that narrows it down for me. Then Christopher calls me to inform me that I would need to clean up the basement there is a guy coming by tonight to check out our furnace. *omg* Has he seen our basement? It’s been our workshop for cutting, sawing and sanding. It’s a freaking mess down there! After my little mental hissy fit and an ice cream cone I cleaned up the basement. I was very surprised at how quick I did it. And guess what? Still no cable guys, shocking right? They eventually showed up a little bit before 3:00 PM. Alright guys, clock is ticking, I have to make it to the dry cleaners before they close. Let’s hustle! They were done in an hour and I raced to the dry cleaners, Lowes and Staples and made it home before Christopher. With dinner all ready all I had to do was set the table and it was ready. And for a bonus EVERYONE like this meal. Win for mom!

Ingredients
Homemade Finger Licking BBQ Sauce
1-1/2 cups ketchup
3 tbsp Dijon Mustard
4 tbsp wostershire sauce
2 tbsp apple cider vinegar
1-1/2 tbsp lemon juice
4 tbsp brown sugar
1 tsp fresh cracked black pepper
1 tsp honey
Pinch of salt
1 small pork roast
Simple Coleslaw
1 (16 oz) bag of coleslaw mix
1/2 cup mayonnaise or miracle whip
2 tbsp sugar
1 tbsp Dijon Mustard
1 tsp honey
Whole wheat dinner rolls
Directions
Preheat oven to 350⁰F. Meanwhile, combine all ingredients into a medium saucepan over medium low heat. Cook for 15 minutes, stirring often. Place pork roast in roasting pan and pour BBQ sauce over and roast until done and easy to shred. Place cabbage into a large bowl. Place mayonnaise, sugar, mustard and honey into a small bowl and mix together. Pour and stir into cabbage until combined. Spoon BBQ pork onto bottom rolls. Top with a spoonful of coleslaw then close with top rolls. Enjoy!
